Italian Wedding Soup Recipe (vegetarian)
- 1 pound navy beans (dried)
- 1 can greens (spinach, collard, or mixed greens)
- 1 onion (chopped)
- 1 Tablespoon olive oil
- 2 teaspoons italian seasoning (or 1t. oregano and 1t. basil)
- 3 teaspoons salt
- 1 teaspoon pepper
- 2 teaspoons garlic powder
Saute onion in olive oil in bottom of large pot. Add beans and water to 3-4 inches above beans. Bring to a boil and lower heat to a simmer, cook for one hour. Add greens, and seasonings, cook for 2 more hours or until beans are tender. You can also cook all day in a crock pot.
