Chef Bao Nguyen’s Beans & Rice Dish

Chef Bao Nguyen (of Quan Hapa) serves up a tasty dish for #beansandriceweek

Sticky Rice Mixture
● 2 cup sweet rice (Glutinous rice/Sticky Rice)
● 1/2 cup hominy

Mung Bean Topping
● 1/2 cup split mung beans
● 2 tsp sugar

Garnish
● Fried Shallots
● Crushed unsalted peanuts

Seasoning Mixture
● 1 Tbsp sugar
● 1 tsp salt
● 1 Tbsp roasted sesame seeds

Cooking Tools
● Steamer or Sticky Rice Bamboo steamer
● Grinder
● Muslin fabric, cheesecloth, or flour pouch

Directions:
1. Soak rice and mung beans overnight (or for 4 hours)
2. Mix rice and hominy and steam until rice is translucent
3. Steam mung beans until you can mash them with your fingers
4. Mash mung beans and mix with sugar
5. Grind sesame seeds and mix with salt and sugar
6. Layer ingredients on plate in this order:
– Rice & hominy
– Mung beans
– Sesame seasoning mixture
– Peanuts
– Fried Shallots
7. It is ready to serve. You can also serve it with a side of sesame seasoning mixture
